Height of Arrows Heavy is an Old Tom style, so has a touch of sweetener added, post-distillation – in this case sugar. followed by the smooth Isle of Skye sea salt in the finish but it’s the Beeswax that sold it for me! This same mind set has been applied to Height of Arrows and hence a complex gin has been born of simplicity, one botanical, juniper enhance with two modifiers, salt and beeswax. Made just down the road, the Height of Arrows gin from Holyrood distillery strips gin to its core, celebrating the flavour and complexity of juniper.

Whisky’s vast array of flavours rely on distillers’ expertise in using just three ingredients, water, malted barley and yeast. Height of Arrows is a gin that allows gin fans to explore a new direction in modern gin making; one that elevates today’s gin drinking experience. To create Height of Arrows they have focused production on gin’s essential botanical, juniper, with each iteration using Juniper in a different way. Nose: The higher ABV and increased botanical mass really jump out the glass, with big aromas of piney juniper and zesty citrus, the latter of which are more prominent than in Original.

The modifiers add layer, mouthfeel and texture; flavour profiles more commonly associated with whisky.

The challenge when making Height of Arrows for Holyrood Distillery was whether they could make a gin with a whisky maker's mindset. Personally I am not a gin drinker, however I am an enthusiastic and attentive host and we had a birthday party at our home yesterday with over 40 adult guests for me to try these two products out on, side by side. With the opportunity to bring single malt distilling back to the centre of Edinburgh after almost 100 years, Holyrood Distillery does so with flavour at the forefront. The florals on the nose carry through to the palate, with herbaceous notes on the finish and an enduring spice.

They are also experimenting with further ways of packing in that juniper flavour and have produced another 2 types not available on line yet - but if you happen to be in Edinburgh…. With the people that were less keen on this one we offered to add some fruit juice of their choice and most seemed to feel this made it a lot better, softening the botanicals which were still strong enough to come through.

The distillery sits in the shadow of Arthur’s Seat that stands at 251 metres above Edinburgh’s old town. It comes in a simple, uncomplicated clear glass bottle with an equally simple but beautifully printed embossed label. Height of Arrows showcases Juniper’s complex flavours, while additions of Isle of Skye sea salt and natural beeswax, marry with juniper to impart a further depth of flavour and create a layered texture. In creating Height of Arrows we sought to create a gin that followed the same principle of utilising a few ingredients to achieve an abundance of flavour. Either the day before or morning of the distillation, the three botanicals are added to the pot and macerated in 60% GNS. The Gaelic name for the mountain is Àrd-Na-Said, which literally translated means the ‘Height of Arrows’ as the mountain was believed to be the furthest distance any archer could shoot an arrow.

Both have an impact on the gin but do not add additional flavour, unlike botanicals that are used to impart flavour in gin. Of course those that preferred this one all said it had a great "Proper" old school gin, uncomplicated flavour profile. Consequently, its profile is straightforward, and yet rewarding, as it allows that one ingredient the room to fully express itself. I have to say it was a fascinating experience and great fun putting so many people on the spot to see and witness their reactions. Throughout the gin boom, I’ve observed brands trying to stand out by using unusual botanicals or creating flavoured expressions.I’ve judged at international spirits competitions and I can truthfully say this is by far and away one of the BEST gins I’ve ever tasted. If you can justify the cost get a bottle of the "Bright" as well because they really are very different and elicit a variety of different reactions when enjoyed side by side which gave our party a fun focus point! All of the Height of Arrows iterations contain one botanical; juniper, which creates an abundance of complex flavours. They believe in stripping back gin to its core essential, juniper, and only focusing on a select few botanicals.
